I did it! I completed week one of the Whip It Up challenge and here I am completing the post for it which it an even bigger accomplishment for me. I love being off of school for summer! I went with the suggestion of a pasta dish since I had a pack of cheese filled tortellini already in the freezer. I searched foodnetwork and recipezaar and I finally decided on this baked cheesy tortellini recipe.
I will try to be better with my pictures in the future post; I kind of slipped my mind this time. Here are the few pictures I did take.
The recipe said to slice the smoked mozzarella, as you can see I did more of a crumbling thing. Other then that I followed the recipe exactly.
I forgot to take a picture of it before I served it so here it is with pan roasted asparagus...gotta get the veggies in.
RECIPE:
Cheesy Baked Tortellini Recipe Olive oil 2 cups marinara sauce 1/3 cup mascarpone cheese 1/4 cup chopped fresh Italian parsley leaves 2 teaspoons chopped fresh thyme leaves 1 pound purchased cheese tortellini 2 ounces thinly sliced smoked mozzarella 1/4 cup freshly grated Parmesan
Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.
Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes
MY REVIEW:
This recipe was very easy and quick to make! I got a little worried about trying to find mascarpone cheese and smoked mozzarella cheese at my local store, but they were right there in the specialty cheese been.
It tasted super yummy! My honey loved it he kept saying, “Wow honey…wow!” New roomie really enjoyed too.
This is recipe is definitely getting its very own plastic page protector and spot in my recipe binder.
