Wow, this challenge has really gone by fast. I cant believe there is only one week left after this. I waited until the night before the posts are do... kind of like the habit I get into with all my school work. Anyways, tonight I am home alone, John and Koen both have things that need tending to out side of the house, so I'm on my own. I didn't feel like cooking a full meal for myself, I guess in retrospect I could have tried out a recipe for one, but I was in the mood for baking tonight, and baking is what I did.
I found a recipe for S'More Cookie Bars at Baking Bites and it looked divine. I love S'Mores and we haven't gone camping yet this season which is very unlike like us, there for I have not had my fix. I decided I would double the recipe since we have a potluck baby shower at work tomorrow.
The ingredients
What can I say...I was a messy cooking tonight.
S’More Cookie Bars
1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs*
1 tsp baking powder
1/4 tsp salt
2 king-sized milk chocolate bars (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Preheat oven to 350°F. Grease an 8-inch square baking pan.
In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.
In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan.
Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick.
Spread chocolate with marshmallow creme or fluff.
Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).
Bake for 30 to 35 minutes, until lightly browned.
Cool completely before cutting into bars
Makes 16 cookie bars.
*Note: 3/4 cup crumbs is approx 7 full-sized graham cracker sheets, whizzed in the food processor until fine.
MMMmmmmmm..... these are yummy! I almost like them better then the real thing because the gram cracker is soft. There is still no one home so I cant get any other opinions, but I know I will make these again.
The only thing that needs to be modified in the recipe is the amount of chocolate bars needed. I bought four since I was planning on doubling it and it took three bars to fit the baking dish. I do remember king size Hersey bars being larger. These had KING SIZE printed right on the front, but they seemed more like regular size. When the first batch was done and cooling I had to run to the market to get two more chocolate bars.
These pair perfect with an ice cold glass of milk.





I love s'more ingredients separately but not all together. Is that weird? These look great for a baby shower, though! I hope they went over well.
Er, there are THREE more weeks to the challenge! Eight weeks total! The last week will start on August 24.
